The History of Japanese Ramen vol. 5

In 1968, “Ramen Jiro” was opened up.  Their ramen style is still famous and it has been inspiring a lot of ramen shops.  It is soy sauce-based ramen with pork bone broth.  It comes with a lot of vegetables, pork, pork fat or minced garlic.  A lot of ramen shops here in Japan serves this Jiro style inspired ramen.

During 1970s to 1990s, one ramen restaurant called “Ramen Shop” were opened up all over Japan.  Their broth is made of pork and chicken bone with soy sauce.  Normal toppings are roasted pork fillet, spinach and nori (seaweed) for this style of ramen.
