The History of Sushi vol. 2

During about 1853 to 1869, people started eating sushi which looks like current sushi.

After the big earthquake in Tokyo area in 1923, sushi chefs came back to their hometown and they made sushi all over Japan food.

Sushi used to be sold at food stands but the Japanese government banned people to serve fresh food at food stands so they brought the stand inside of their sushi shops.
You will still see the food-stand-like counter at every sushi restaurant in Japan!
